Member statement: At the Flying Apron we source 90 percent of our ingredients locally, even in the winter. Our strong partnership with our farmers and fishermen allows us to promote the growth of our local and provincial economy. And by purchasing local and organic products, we support sustainable food production. Our decision to serve land-raised, not ocean-raised farmed salmon is just one example of this philosophy. The salmon we serve is raised just down the road, in tanks and on land, without antibiotics or chemicals, and without damaging our marine environment on which our province and future depends. -Chris and Melissa Velden, owners and chefs
