Lincoln Street Food

Member statement: Farmed salmon doesn’t cut it for taste and the toxins we don’t need in our bodies. While there are salmon farmers embracing more advanced cultivation approaches, nothing currently beats wild salmon. The question of overfishing is a sustainability issue for salmon and all species that make it from water to table. How we solve that -- or not -- will be an intensifying problem in a crowded world where seafood is a desirable diet stable. -Paolo Colbertaldo, owner, chef
